Blueberry Cream Cheese Muffin
Ingredients:
6 oz (1 1/2 sticks) butter
12 oz (1 1/2 sticks) cream cheese
1 1/2 cups sugar
6 eggs
2 cup flour
2 tsp baking powder
1 tsp salt
1 tsp vanilla
2 cups blueberries + 1 Tbsp flour (toss together)
Method:
1. Preheat oven to 350 degrees F. Place 24 paper liners in muffin pans.
2. In a mixer, beat butter, cream cheese and sugar until creamy and light.
3. Add in eggs, one at a time, beating well after each addition. Add in vanilla.
4. In a mixing bowl, sift flour, baking powder and salt. Slow down the mixer and slowly add in the flour to the butter mixture. Mix well.
5. Lastly add in the blueberries.
6. Scoop the batter into the prepared muffin pans, filling each cup just over the top and bake for 25 to 30 minutes or until golden brown. Cool for 10 minutes in the pan before remove the cake out of the pan. Cool completely before serve.
